Ingredients
8 servings
4 tablespoonsunsalted butter
1yellow onion
small, diced
2cloves garlic
minced
¼ cupall-purpose flour
or cornstarch for gluten-free
4 cupschicken broth
2 cupswhole milk
or half & half for extra richness
3 cupsfresh broccoli florets
chopped into bite-sized pieces
1carrot
large, shredded or finely diced
2 cupssharp cheddar cheese shredded
¾ teaspoonsalt
or to taste
½ teaspoonblack pepper
¼ teaspoonpaprika
optional, for extra flavor
Instructions
Step 1
In a large pot or Dutch oven, melt the butter over medium heat. Add the onion and cook for 4–5 minutes, until soft and translucent. Add the garlic and cook for 30 seconds, until fragrant.
Step 2
Stir in the flour and cook for 1–2 minutes, stirring constantly, to form a roux.
Step 3
Slowly whisk in the chicken broth until smooth.
Step 4
Add the milk and bring the mixture to a gentle simmer, stirring often.
Step 5
Add the broccoli and carrot. Simmer for 10–15 minutes, until the broccoli is tender.
Step 6
Reduce the heat to low. Stir in the cheddar cheese, a handful at a time, until melted and smooth.
Step 7
Season with salt, pepper, and paprika. Taste and adjust as needed.
Step 8
Simmer for a few more minutes, then ladle into bowls and enjoy!
