Instructions
Step 1

Cut pork back fat into small cubes, blanch briefly, then coat with sugar and dry until slightly translucent. This helps create juicy fat pieces inside the grilled nem nướng.
Step 2

Finely mince shallots and garlic. Reserve a small amount for the dipping sauce and use the remaining aromatics for the pork mixture.
Step 3

Combine ground pork, giò sống, seasonings, aromatics, tapioca starch, and prepared pork fat. Mix until the mixture becomes sticky, glossy, and cohesive.
Step 4

Cover the pork mixture and refrigerate until firm. Keeping the mixture cold helps develop the springy texture of nem nướng.
Step 5

Coat hands with oil, divide the pork mixture into portions, and shape each portion evenly around bamboo skewers.
Step 6

Mix honey, water, oyster sauce, and annatto oil to create the finishing glaze.
Step 7

Cook the skewers over charcoal or another heat source until browned and cooked through. Brush with glaze near the end to create a glossy caramelized surface.
Step 8

Cook pork and shrimp with aromatics, then combine with soybean sauce, hoisin sauce, peanut butter, and seasonings. Blend and thicken until smooth.
Step 9

Serve grilled nem nướng with rice paper, bánh hỏi, lettuce, herbs, cucumber, pickled vegetables, and dipping sauce. Wrap the ingredients together before eating.
