Step 1
Preheat oven to 190°C and line a muffin pan with 10 muffin liners.
Step 2
In a medium bowl, whisk together the eggs, milk, maple syrup, melted coconut oil, vanilla extract and salt until well combined.
Step 3
Add the flour, almond meal, matcha powder, and baking powder to the wet ingredients. Stir until just combined. Gently fold in the white chocolate chips and frozen raspberries.
Step 4
Spoon the batter evenly into the lined muffin pan. Bake for 25–30 minutes, or until a skewer inserted into the centre comes out clean. Remove from the oven and let cool slightly. Dust with icing sugar before serving.
