Instructions
Step 1

Start by melting the butter.
Step 2

Then add the milk, and remove the pan from the heat.
Step 3

Add the flour, sifting and mixing as you go.
Step 4

You should have this texture without lumps.
Step 5

Separate the egg whites and yolks.
Step 6

Leave the whites aside, and pour the yolks into the mixture.
Step 7

Add the vanilla extract and mix well.
Step 8

You must obtain this texture. Once done, leave aside while you prepare the meringue ☁️.

Start whipping the egg whites at medium speed.
Step 10

Once the mixture is frothy with this aspect, add half of the sugar, and continue to whisk on medium speed.

The whites will then start to get a little brighter.
Step 12

Now you can add the remaining sugar. Whip again on medium speed.
Step 13

Stop once the meringue has this appearance, shiny with firm but soft peaks.
Step 14

Add 1/3 of the meringue to the previous mixture.

Mix gently.
Step 16

Then add the whole mixture to the meringue.

Mix gently with a marysee so as not to incorporate air. This is where it all comes together 😉 be gentle!

The mixture should look like this. ✨

Then pour the mixture into a 16cm diameter mold.

Little tip: put your mold in a water bath before baking, the cake will be softer. :)
Step 21

Bake at 150°C for about 60-70 minutes (depends on your oven). The cake should be golden brown when baked!
