Grilled Salmon Kabobs

Ingredients
4 servings
⅓ cupLiquid Amminos
¼ cupfresh lemon juice
2cloves garlic
minced
2 tablespoonsolive oil
2 teaspoonsdijon mustard
2 teaspoonsdark sesame oil
1 tablespoonfresh herbs
minced, such as parsley, basil, or rosemary
1 teaspoongrated lemon zest
2 poundssalmon fillets
preferably from middle of the fish, skin on
bamboo skewers
soaked in water 1 hour before using
Instructions
Step 1
In a bowl, combine all ingredients, except salmon.
Step 2
Cut salmon into 1-1/2- to 2-inch cubes or large rectangles (if pieces are too small, the salmon will dry out during cooking). Thread fish onto two parallel skewers (this makes it easier to turn them during cooking). Place skewers in a shallow baking dish and pour marinade over fish. Refrigerate for 1 hour, turning once.
Step 3
Preheat grill until hot. Brush salmon again with marinade. Grill fish directly over heat for 4 minutes. Turn and grill for another 4 to 6 minutes, or until opaque.
