Chicken Breast Stuffed with Apple and Cheese with Mashed Potatoes

Instructions

Step 1
Preheat the oven to 200 degrees.
Step 2
Wash the apples and cut them into thin slices. Cut the cheese into slices as well.
Step 3
Place the chicken breast fillets on a cutting board and make a slit lengthwise in each one, but do not cut all the way through. Open up the chicken breast fillets along the slit. Season both sides with salt, pepper, and thyme.
Step 4
Divide the apple and cheese slices into 4 portions. Arrange equal portions of the apple and cheese slices on one side of each chicken breast fillet, then fold the other half of the fillet over them, pressing the layers together slightly.
Step 5
Heat oil in a skillet over high heat, then add two stuffed chicken breasts. Sear both sides for 2 minutes each. Place them in a baking dish. Repeat this process with the other 2 stuffed chicken breasts.
Step 6
In a small bowl, mix together the honey and mustard. Brush the mixture over the top of the chicken breasts. Place them in a hot oven for 20–25 minutes, until the meat is fully cooked through.
Step 7
To make mashed potatoes, peel the potatoes, cut them into roughly equal-sized pieces, and place them in cold, salted water.
Step 8
Bring to a boil, then cook over medium heat for about 15–20 minutes, until completely tender.
Step 9
Drain very thoroughly. Then return the potatoes to the empty, still-warm pot over low heat for 1–2 minutes, and gently shake the pot. This will allow the excess moisture to evaporate.
Step 10
Mash them while they’re still hot using a potato masher.
Step 11
First, stir in the butter.
Step 12
Heat the milk separately, then add it to the potatoes in small batches. About 120 ml should be enough to start with. Only add more if it’s really necessary.
Step 13
Season with salt and pepper, and if you like, add a little nutmeg.
