Instructions
Step 1
Preheat oven to 375°F. Line a baking sheet with parchment paper.
Step 2
Cream the butter and sugars. Beat the softened butter, brown sugar, and granulated sugar for about 1–2 minutes until well combined.
Step 3
Add the oil and wet ingredients. Mix in the olive oil, egg, and vanilla until smooth.
Step 4
Combine dry ingredients. In a separate bowl, whisk together the Bisquick Heart Smart, whole-wheat pastry flour, baking soda, and salt.
Step 5
Make the dough. Gradually add the dry ingredients to the wet mixture. Mix just until combined—don't overmix.
Step 6
Add chocolate chips. Fold them in gently.
Step 7
Chill. Cover and refrigerate the dough for 30–45 minutes. This is especially helpful because of the olive oil.
Step 8
Scoop. Make dough balls about 1½–2 tablespoons each and place them about 2 inches apart on the baking sheet. Leave them fairly rounded rather than flattening them completely.
Step 9
Bake for 9–11 minutes. Look for golden-brown edges with centers that still look slightly soft.
Step 10
Rest. Leave the cookies on the baking sheet for 5 minutes, then move them to a cooling rack.
