Step 1
Cook the dates: Put dates and water in a small saucepan. Simmer over medium-low heat for 5–7 minutes, stirring and smashing them with a spoon. You want a thick, spreadable paste. Add honey, spices and salt.

Heat oven to 350°F.
Step 3
Mix oats, flour, sugar, walnuts, cinnamon and salt. Pour in melted butter and mix until you have coarse, buttery crumbs.

Press about 60% of the crumble firmly into a greased 8×8 pan.

Spread the date mixture over it.
Step 6
Scatter the remaining crumble over the top, but don't press it down.
Step 7
Bake 30–35 minutes, until the top is nicely browned.
Step 8
Cool for at least 30 minutes before cutting.

🔥 One upgrade I'd strongly recommend: Honey-Butter Drizzle. Mix honey, butter, cinnamon, and salt in a pan. Warm together on low heat.

And toast the walnuts first if you can—350°F for about 6–8 minutes. That will make these taste considerably more sophisticated than the ingredient list suggests.
