Instructions

Step 1
Preheat and prep - Preheat oven to 350°F. Grease a 9x5-inch loaf pan with butter or line it with parchment paper.
Step 2
In a large bowl, mash the ripe bananas with a fork until mostly smooth (a few small lumps are fine).
Step 3
Mix the wet ingredients - Stir the melted butter into the bananas. Add the sugar, eggs, and vanilla. Mix until well combined.
Step 4
Add the dry ingredients - In a separate bowl, whisk together the flour, baking soda, salt, and cinnamon. Add the dry mixture to the wet ingredients and stir just until no dry streaks remain. Do not over mix. Fold in nuts or chocolate chips if using.
Step 5
Pour the batter into the prepared pan and smooth the top. Bake 45-55 minutes, until a toothpick inserted in the center comes out clean or with a few moist crumbs (not wet batter). If the top browns too quickly, tent loosely with foil for the last 15 minutes.
Step 6
Let the loaf cool in the pan for 10–15 minutes, then turn it out onto a wire rack to cool further before slicing.
