Instructions

Pat meat dry with paper towels and season with salt

Press garlic and combine with spices in small bowl

Over medium high heat in the large pot add vegetable oil and sear the meat in batches and set on wire rack when done

Turn heat down to medium and sauté onion halves until slightly charred. Add tomato paste and cook until darkened

Add bowl of spices and bowl of apple cider vinegar and cook 30 seconds until fragrant, stirring constantly

Add water and better than bouillon and bring to a simmer

In a dry pan over medium heat, toast chilis about 10-15 seconds per side

Remove and add peppercorns and coriander seed and toast until fragrant, then remove from pan

To the large pot, add the seared meat, toasted chilis, toasted whole spices, cinnamon stick(s), and bay leaves. Cover, reduce heat to low and simmer for 1 hour

Remove chilis and onion halves from pot and add to blender along with 2.5 cups of liquid (remember to multiply the amount of liquid if scaling the recipe) and blend until smooth **DO NOT POUR BACK INTO POT UNTIL COMPLETING THE NEXT STEP**

Remove meat from pot and then strain the liquid to remove the whole spices. Add the meat, liquid, and blended chilis back into the pot and then cover and simmer on low for 1.5 more hours

Remove meat from pot into large bowl and shred and remove fat
Step 18
Add the remaining 1/3 of the apple cider vinegar to the consome. Taste and add salt/acid as needed

Chop cilantro and tear oaxaca cheese into strips

Skim fat from top of consome and add to a shallow bowl to dip tortillas

Heat pan over medium heat

Dip tortilla in consome and add to pan along with oaxaca cheese
Step 23
Once melted, add meat and quesadilla cheese and drizzle with consome, close and then flip
