Step 1
Start off by chopping your meat into 3 inch pieces (brown/sear it in a pan. 4 min on each side)

Place 4-5 cups of water in the crockpot, add your meat, half of your onion, the whole garlic head, and seasonings to taste. Crockpot can be placed on high for 6 hours

After the meat has cooked for 1 hour, de-vein and de-seed the dried peppers (I use about 3 of the ancho and arbol chiles, and a good handful of the chile guajillo), using a pair of scissors. Cut them length-wise and remove all the seeds

Step 4
Once de-veined and de-seeded, boil them in a separate pot over the stove with the tomato and 6 cloves for about 5-7 minutes or until tender (save some of the chili water for the next step!!)

After 1 hour in the crockpot the garlic and onion should be tender and soft. Take the onion and garlic out of your crockpot and into a blender, add the cloves, the tomato and chiles you boiled and add some of that reserved chile water into that blender as well. Season to taste!

Add your blended sauce to the crockpot over the meat, season again to taste and add a few bay leaves and some extra oregano over top. Cover and let it cook for the remainder of the time (5 hours)

After your meat is cooked and shredded, dice the other half of the onion we didn’t use in the cooking process and slice up the cilantro. Then, we can begin making the tacos! Just dip a tortilla in the crockpot consome, and cook with the meat, cheese, onion, and cilantro. Grab a bowl and add some consome to dip along with additional cilantro and onion. Add any fixings you like after that. I love to eat mine with freshly cooked spanish rice 😋
