Instructions

Step 1
Heat the oven to 190°C conventional, 170°C fan.
Step 2
2. Gently cook the onion in a little oil for about 5 minutes until soft. Add the garlic for the final minute. Allow to cool slightly.

3. Put the mince, breadcrumbs, egg, milk, ketchup, Worcestershire sauce, mustard, herbs and seasoning into a bowl. Add the cooled onion and garlic.

4. Mix thoroughly, but do not overwork the meat. Human beings have an unfortunate tendency to knead meat until it acquires the texture of building material.

5. Shape into a compact loaf and place in a small loaf tin or baking dish.
Step 6
6. Mix the glaze ingredients together and spread over the top.
Step 7
7. Bake for 35 to 40 minutes, until cooked through. The centre should reach 75°C if using a meat thermometer.
Step 8
8. Rest for 5 to 10 minutes before slicing.
