Instructions
Step 1
In a pan over medium heat, melt butter.
Step 2
Add the chopped onions and garlic, cook until translucent.
Step 3
Add the spinach, salt, and pepper, cook until spinach is wilted.
Step 4
Add the breadcrumbs, parmesan , cream cheese & dill, stir to combine everything.
Step 5
Take the rashers and lay on cling wrap.
Step 6
Place the salmon fillet and season.
Step 7
Scoop the spinach mixture on top of the salmon, and smooth it out.
Step 8
Fold the edges of the rashers over the salmon
Step 9
Smooth out the sheet of puff pastry with rolling pin.
Step 10
Place salmon and rashers wrap on to the puff pastry.
Step 11
Egg wash the sheet and fold the edges.
Step 12
Trim any excess pastry from the ends, then fold the ends inside.
Step 13
Flip the puff pastry on the baking sheet lined with parchment paper.
Step 14
Brush the wellington with egg wash.
Step 15
Add an additional latticed puff pastry on top and brush with egg wash again.
Step 16
Bake in preheat oven at 200 c for 25-30 minutes or until top golden brown.
