Ingredients

½ cupcarrot
finely grated
1egg
2 Tbspunsweetened applesauce
2 Tbspplain greek yogurt
1 Tbspunsalted butter
melted, or neutral oil
2 Tbspmaple syrup
½ tspvanilla
½ cupwhole-wheat flour
¼ tspbaking powder
¼ tspbaking soda
¼ tspcinnamon
salt
2 TbspPhiladelphia cream cheese
softened
1 Tbspplain greek yogurt
1 tspmaple syrup
to taste
vanilla

Instructions
Step 1
Heat oven to 350°F / 175°C. Line 6 muffin cups.
Step 2
Grate the carrot very finely so the muffins stay soft.
Step 3
Whisk egg, applesauce, yogurt, butter/oil, maple syrup and vanilla.
Step 4
Add flour, baking powder, baking soda, cinnamon and salt. Mix just until combined.
Step 5
Divide between 6 muffin cups and bake for about 15–18 minutes, until a toothpick comes out clean.
Step 6
Cool completely.
Step 7
Mix the Philadelphia, yogurt and maple syrup until smooth. Spread a thin layer on each muffin.
