Instructions

Step 1
Melt 250g butter in a pan. Once melted, whisk in the milk powder and keep whisking to brown until deep amber and has a nutty aroma. Let cool until mixture is opaque and soft, like room-temperature butter.
Step 2
Grind 50 g Werther's in a food processor.
Step 3
Weigh out 240 g browned butter and mix with brown sugar, granulated sugar, and Werther's until well combined.
Step 4
Whisk in the egg, yolk, almond extract, and vanilla.
Step 5
In a separate bowl, whisk together the AP flour, corn starch, baking soda, baking powder, nutmeg, and salt.
Step 6
Using a spatula, fold in dry ingredients to wet ingredients until 70% combined.
Step 7
Fold in the chocolate and mix everything until just combined (do not overwork/overmix).
Step 8
Portion dough into 80 g balls, shaping them slightly taller than they are wide.
Step 9
Chill dough in fridge for at least 6 hours (ideally overnight).
Step 10
Bake straight from the fridge at 375°F no fan for around 10-12 minutes, until the edges are golden and the centers are still a soft but don’t look shiny or wet.
Step 11
Bang the baking tray on a work top a couple times and let cookies cool on the baking tray for 10 minutes. Remove cookies from tray after 10 minutes and let cool on a rack.
