Instructions
Step 1
Prepare the potatoes: Wash the potatoes. If they are large, cut into halves or quarters (keep small ones whole).
Step 2
Boil the potatoes: Put the potatoes in a saucepan. Cover with cold water. Bring to the boil, then simmer for 15–20 minutes until tender (easy to pierce with a fork).
Step 3
Add the broccoli: About 5 minutes before the potatoes are ready, add the broccoli to the same pan. Cook for 4–5 minutes until tender but still bright green.
Step 4
Fry the salmon: While the veg are cooking, heat 1 tbsp oil and 1 tsp butter in a frying pan over medium heat. Place the salmon in the pan, skin side down (if it has skin). Fry for 3–4 minutes until the skin is crispy and golden.
Step 5
Turn and finish: Gently turn the salmon over. Fry for another 2–3 minutes, until cooked through and it flakes easily with a fork. Add a pinch of salt and pepper.
Step 6
Drain and serve: Drain the potatoes and broccoli in a colander. You can add a small knob of butter or a pinch of salt if you like.
Step 7
Plate up: Put the potatoes, broccoli and salmon on a plate. Add a squeeze of lemon (optional). Enjoy!
