Creamy Dijon Pork Chops with herb potatoes & sautéed zucchini is a family favorite. The sides add to the flavor & vibe of this recipe like nothing else. This meal is easy to make & is a great way to feed the family.
Steak & chicken can also be substituted for pork if you need a different protein source.

Step 1
Preheat oven to 450 degrees. Peel & chop the potatoes into ½-inch pieces. Trim & halve the zucchini lengthwise; slice crosswise into ½-inch-thick half-moons. Trim & thinly slice the scallions, separating the whites from the greens. Peel & dice garlic.
Step 2
Toss the potatoes on a baking sheet with a large drizzle of oil, 1 tbsp of the Italian Seasoning (you’ll use the rest later), salt, & pepper. Roast until browned & tender, about 20-25 minutes.
Step 3
While the potatoes roast, heat a drizzle of oil in a pan over medium-high heat. Add the zucchini & season with salt & pepper to taste. Stirring often, cook until it’s browned & tender, about 4-8 minutes. Transfer to a plate. Cover to keep warm.
Step 4
Pat the pork chops dry with paper towels. Season all over to taste with the remaining Italian Seasoning, salt, & pepper. Heat a drizzle of oil in the pan used for the zucchini over medium-high heat. Add the pork chops & cook until browned & cooked through, approx. 4-5 minutes per side. (Lower the heat if the pork begins to brown too fast!)
Turn off the heat & transfer the pork chops to a cutting board to rest for 5 minutes. Wash out & dry the pan.
*Swap in steak or chicken for pork; cook steak 3-5 minutes per side or chicken 5-6 minutes a side.
Step 5
Heat a drizzle of oil in the same pan over medium heat. Add the scallion whites & garlic. Stirring, cook until fragrant, about 30-45 seconds. Stir in the stock concentrate & water. Remove the pan from the heat & let it cool slightly. Then stir in the sour cream, mustard, & butter until melted & combined. Season the sauce with pepper to taste.
(If sauce seems too thick, stir in another splash of water.)
Step 6
Thinly slice the pork chops crosswise. Divide up the chicken, potatoes, & zucchini into servings. Drizzle the pork with sauce & sprinkle with scallion greens.
*Slice steak against the grain or slice chicken crosswise.
