Ingredients

900gchicken breast
raw, 2-3 cm chunks
20gcornstarch
½ tspsalt
½ tspgarlic powder
½ tspginger powder
½ tspwhite pepper
Oil
spray only
80mlorange juice
40glow sugar marmalade
45mllight soy sauce
20mlrice vinegar
1 tspsesame oil
3garlic cloves
minced
1 tspgrated ginger
8gcornstarch
2 Tbspwater
cold, slurry
½ tspchilli flakes
or chilli crisp
400gtenderstem
200gmangetout
or sugar snaps
1red pepper
sliced
160gfrozen shelled edamame
2spring onions
sliced
1 tspsesame seeds
for the whole batch
Instructions
Step 1
Toss chicken with cornstarch and dry spices.
Step 2
Air-fry at 200°C for 12–15 min. Shake once. Spray only — do not pan-fry.
Step 3
Steam or microwave broccoli 4 min. Hot pan, oil spray: pepper + mangetout 3 min; add edamame for the last 2 min. Keep them bright.
Step 4
Make sauce in a non-stick pan: orange juice, marmalade, soy, vinegar, sesame oil, garlic, ginger, chilli. Simmer 2 min. Add slurry and cook until it coats a spoon (not glue).
Step 5
Toss chicken through the sauce for 60 seconds only.
Step 6
Serve/box: veg first, chicken on top. Add spring onion and a pinch of sesame.
