Instructions

Step 1
Preheat oven to 400°F (200°C). Toss potatoes with 1 tsp olive oil, salt and pepper and roast in a baking dish for 15 minutes.
Step 2
Meanwhile, cook onion in remaining oil and butter over medium-low heat for 10–12 minutes until deeply caramelized. Add garlic and thyme for the final 30 seconds.
Step 3
Season chicken and add to the baking dish with the potatoes. Spoon onions over and around the chicken and pour in the broth.
Step 4
Bake for 18–22 minutes until the chicken is cooked through and potatoes are tender. Sprinkle Gruyère over the chicken and broil for 2–3 minutes until browned and bubbling.
