3 tablespoonscider vinegar
2 tablespoonsshallot

1 ½ tablespoonswhole-grain Dijon mustard
1 tablespoonpure maple syrup
½ teaspoonground pepper
plus more for garnish
¼ teaspoonsalt
⅓ cupextra-virgin olive oil
0.5 headgreen cabbage
medium, cored and finely chopped
1 x 15 ouncecan no-salt-added white beans
rinsed
1Gala apple
large, or Honeycrisp, unpeeled, chopped
1 cupsharp cheddar cheese
cubed
¼ cupwalnuts
toasted chopped
Instructions
Step 1
Whisk 3 tablespoons vinegar, 2 tablespoons shallot, 1½ tablespoons mustard, 1 tablespoon maple syrup, ½ teaspoon pepper and ¼ teaspoon salt in a large bowl until combined. Gradually whisk in ⅓ cup oil until the vinaigrette is smooth and emulsified.
Step 2
Add chopped cabbage, rinsed beans, chopped apple and 1 cup Cheddar to the bowl; toss until evenly coated. Sprinkle with ¼ cup walnuts. Garnish with additional ground pepper, if desired.

Refrigerate dressing (Step 1) in an airtight container for up to 3 days.
