Directions:
1. Preheat the oven to 350°F (180°C) and line a large baking sheet with parchment paper.
2. Drain and rinse the chickpeas, then pat them really dry.
3. Add the chickpeas, peanut butter, honey, and vanilla to a food processor. Blend until completely smooth, scraping down the sides as needed.
4. Transfer to a bowl and add the brown sugar, oat flour, all-purpose flour, baking powder, and salt. Mix until a slightly sticky cookie dough forms. Fold in most of the dark chocolate chips.
5. Let the dough rest for a minute or two so the flour and oats can absorb some of the moisture.
6. Press the dough into a rectangle about 1/2–3/4 inch thick and slice into 14 cookie fries. Separate them slightly on the baking sheet and press the remaining dark chocolate chips on top.
7. Bake for 14–18 minutes, until lightly golden around the edges but still soft in the middle.
8. Let cool on the baking sheet for 10 minutes to firm up. Finish with flaky sea salt if desired and enjoy!
