0.45kgcremini mushrooms

¼ cupplain greek yogurt
59mlwhole milk
Extra virgin olive oil
1 tbsp for sauce + 1 tbsp for mash
2 Tbspbalsamic vinegar
1 Tbsppure maple syrup
1 Tbspsoy sauce
¼ tspdried thyme

1/4 tsp for sauce + 1/2 tsp for mash

Instructions
Step 1
Preheat the oven to 230°C (450°F). Line a baking sheet with aluminum foil (for easy clean-up).
Step 2
Wash and dry the fresh produce.
Step 3
Peel the garlic. Mince 1 clove and add to a small bowl; set the other cloves aside.
Step 4
Add oil, vinegar, maple syrup, soy sauce, and spices to the bowl with the garlic; whisk to combine the sauce. (1 tbsp extra virgin olive oil, 2 tbsp balsamic vinegar, 1 tbsp pure maple syrup, 1 tbsp soy sauce, 1/4 tsp dried thyme, 1/4 tsp salt)
Step 5
Quarter mushrooms and place on the baking sheet. Drizzle with sauce and stir to coat, then spread out in an even layer. Place in the oven and bake, stirring halfway through, until tender, about 15 minutes.
Step 6
Large dice the potatoes. Transfer potatoes and remaining garlic cloves to a medium saucepan, cover with water, put on the lid, and bring to a boil.
Step 7
Fold kale leaves in half lengthwise and slice off the stems, then thinly slice crosswise into shreds.
Step 8
Once the water in the saucepan is boiling, remove the lid and cook until the potatoes are almost done, about 8 minutes. Add kale to the pan and cook 2 minutes more.
Step 9
Grate the cheese.
Step 10
Shave parsley leaves off the stems; discard the stems and mince the leaves.
Step 11
Once potatoes, garlic, and kale are done, drain and return to the saucepan.
Step 12
Add oil, milk, yogurt, parsley, and spices to the saucepan with the potatoes and mash until almost smooth. (1 tbsp extra virgin olive oil, 59 ml (1/4 cup) whole milk, 1/4 cup plain Greek yogurt, 1/4 tsp onion powder, 1/2 tsp salt, 1/4 tsp black pepper)
Step 13
Stir cheese into the mashed potatoes and return to medium-high heat. Cook, stirring constantly, until melted, 1–2 minutes.
Step 14
Trim off the ends of the green onions; cut the onions crosswise into 1/4-inch pieces at an angle.
Step 15
To serve, divide mashed potatoes between bowls. Spoon mushrooms and their cooking juices over the potatoes and sprinkle with green onion. Enjoy!
