Instructions
Step 1
Start by mixing the flour and water in a large bowl until a shaggy dough forms, then knead it for 8 to 10 minutes until smooth. Cover it and let it rest for 30 minutes so it’s easy to roll.
Step 2
While it rests, finely chop the cabbage, mince the ginger and garlic and thinly slice the scallions, then sauté them in a pan with a splash of oil for 5 minutes and let them cool slightly.
Step 3
In a bowl, combine the pork with the soy sauce, sesame oil, salt, cornstarch and sugar, add the sautéed vegetables and stir in one direction until the mixture turns sticky and cohesive.
Step 4
Roll the dough into a log, cut it into about 30 pieces and roll each one into a thin circle about 8 cm wide, dusting lightly with flour so they don’t stick. Place about 1 heaping tablespoon of filling in the center of each wrapper, fold it over and pinch the edges firmly, pleating if you like, so no filling can leak.
Step 5
Preheat the air fryer to 180 °C for 3 minutes, then lightly brush or spray the dumplings and the basket with oil so they brown and don’t stick. Arrange the dumplings in a single layer without touching and cook them at 180 °C for 15 minutes, flipping them halfway through and working in batches. They are ready when they are golden and crisp and the filling is fully cooked (74 °C inside). Let them rest for 2 minutes and serve hot with your favorite dipping sauce.
