Instructions
Step 1
Grind & Rub Herbs: Rub the dried Mexican oregano between your palms or grind it briefly in a mortar to turn the leaves into fine flakes so they blend uniformly with the powders.
Whisk Thoroughly: Combine all spices and the arrowroot powder in a large bowl. Whisk vigorously for at least 60 seconds so the arrowroot and finer spices (cayenne, cinnamon) disperse evenly throughout the chili base.
Usage Ratio: Use 2.5 to 3 tablespoons (approx. 20–22 g / 0.70–0.78 oz) of mix per 1 lb (454 g) of cooked meat or filling.
Cooking Method:
Brown the filling and drain excess fat if needed.
Sprinkle the seasoning evenly over the warm food.
Add 1/3 to 1/2 cup (80–120 ml) of water or unsalted broth.
Simmer gently over medium-low heat for 2 to 3 minutes, stirring continuously until the sauce turns glossy and clings tightly to the filling. Remove from heat promptly to keep the arrowroot from breaking down under prolonged boiling.
