Nacho Average Cheese & Jalapeño Sauce

This super simple cheese sauce is inspired by the cheese sauce served with nacho’s at the cinema. It’s not for everyone, but when cinemas were closed during the pandemic, I had to recreate it for the home movie nights! 🎬
I love to add this to nacho’s, French fries, or loaded tater tots!

Instructions
Step 1
Grate cheddar cheese and chop the jalapeños (use less if you don’t like spice).
Step 2
Melt the butter in a saucepan on a medium heat.
Step 3
Once the butter has melted, add the flour and mix to create a roux.
Step 4
Cook the roux for 3-4 minutes to cook off the flour.
Step 5
Then, gradually add the milk and a splash of jalapeño brine and whisk.
Step 6
Add the chopped jalapeños, turmeric (this gives it the yellow cheese colour we all know and love), smoked paprika, salt and pepper, and stir.
Step 7
Bring to a boil and then simmer and allow to thicken, 5-10 minutes.
Step 8
Top your nacho’s, fries, or tater tots. Enjoy 🧀
Step 9
The sauce can be kept in a sealed container in the fridge for up to 3 days. Add more milk to loosen and heat in the microwave or saucepan for 2-3 minutes.
