Instructions

Step 1
1. Prepare the pumpkin
Step 2
Peel the pumpkin, cut it in half, scoop out the seeds, and cut the flesh into small cubes. Carefully cut away from your hand when peeling.
Step 3
2. Sauté the onion
Step 4
Heat the olive oil in a large pot. Chop the onion and cook it until softened; it does not need to brown heavily.
Step 5
3. Cook and season the pumpkin
Step 6
Add the pumpkin cubes and sauté briefly to develop their flavor. Season with salt, pepper, saffron, freshly grated nutmeg, cardamom, and chili flakes.
Step 7
4. Add stock and simmer
Step 8
Pour in enough stock to cover the pumpkin. Cover the pot and simmer for approximately 15 minutes, or until the pumpkin is completely tender.
Step 9
5. Blend until smooth
Step 10
Stir in the coconut milk, then use an immersion blender to blend the soup into a smooth, creamy consistency. Adjust the seasoning and add a little more stock if needed.
Step 11
6. Prepare the garnish and serve
Step 12
Toast the pumpkin seeds in a dry skillet with a pinch of salt and a little brown sugar until lightly caramelized. Sprinkle them over the soup and finish with fresh coriander leaves.
