Instructions

Step 1
Moisten the Chicken: In a medium bowl, gently toss the finely chopped or shredded chicken with the chicken broth and salt. Let it sit for a few minutes to absorb the liquid. This replicates the tender, juicy texture of packaged white chicken in broth.
Step 2
Whisk the Dressing Base: In a large mixing bowl, whisk together the mayonnaise, minced onion, apple cider vinegar, brown sugar, smoky chili seasoning, minced garlic, hot sauce, salt, and black pepper until completely smooth.
Step 3
Incorporate the Seasoning Profile: Stir the lemon juice, white sugar, brown sugar, and the remaining dry spices (paprika, chili powder, garlic powder, onion powder, and turmeric) directly into the mayonnaise mixture. Blend thoroughly to fully develop the signature tangy, sweet, and smoky deli flavor profile.
Step 4
Combine and Fold: Add the prepared chicken and the finely chopped celery into the dressing bowl. Using a spatula, fold the ingredients together gently until the chicken and celery are completely and evenly coated.
Step 5
Chill and Serve: Cover the bowl tightly with plastic wrap or transfer to an airtight container. Refrigerate for at least 2 to 4 hours (ideally overnight) before serving. Stir well before plating on fresh croissants, leafy greens, or alongside crackers.
