Step 2
Wash and thoroughly dry the 2 pounds of fresh blueberries. Divide into two portions: approximately 1½ pounds for the syrup and ½ pound for the filling, garnish, and finishing.

Step 3
Separate the 2 vanilla beans. Split each lengthwise and scrape out the seeds with the back of a knife. Reserve the empty pods for infusing the syrup or milk.

Step 5
Divide the Nurri milk between the French toast custard and the cream preparation, reserving a little for adjusting consistency. Keep the Ratio Vanilla Bean Yogurt refrigerated until ready to prepare the cream.

Step 6
Timing: Complete all measuring and preparation before turning on the stove. The blueberry syrup must be started first, followed by the cream filling, with the French toast cooked last.
Step 7
Prepare the Blueberry Syrup: Place approximately 1½ pounds of blueberries into a medium saucepan with the ¼ cup sugar, freshly squeezed lemon juice, one scraped vanilla bean pod, and a small splash of water.

Step 8
Set over medium-low heat. Stir gently every 3 minutes as the blueberries begin releasing their natural juices, approximately 10-15 minutes.
Step 9
Once the berries begin bursting, increase the heat slightly to maintain a gentle simmer. Continue cooking for approximately 10–15 minutes, stirring occasionally and gently crushing some of the berries to release additional juice. The mixture should reduce into a vibrant, glossy syrup with a combination of whole berries and softened fruit.
Step 10
Avoid boiling aggressively. The goal is a pourable blueberry reduction, not a thick jam. Remove the vanilla pod and take the saucepan off the heat when the syrup lightly coats the back of a spoon.
Step 11
Reserve covered. Rewarm gently just before plating, adding a teaspoon or two of water if necessary to restore a pourable consistency.
Step 12
Prepare the Vanilla-Cardamom Cream Filling. In a mixing bowl, combine the Ratio Vanilla Bean Yogurt with the seeds from one vanilla bean and approximately ¾ teaspoon of the ground cardamom. Whisk until smooth, thick, and evenly incorporated.

Step 13
If the mixture is excessively thick, add Nurri milk one teaspoon at a time until it reaches a creamy, spreadable consistency. Avoid adding too much liquid, as the filling must remain thick enough to stay between the bread slices.

Step 14
Fold a small handful of reserved fresh blueberries into the cream, if desired, leaving some whole for garnish. Cover and refrigerate for at least 10–15 minutes while preparing the French toast custard.
Step 15
Important: Keep the filling cold until assembly. A chilled, thick cream will hold its shape better and provide a pleasant contrast to the warm toast.
Step 16
Prepare the Cinnamon-Vanilla French Toast Custard. In a wide, shallow bowl, crack the 2 eggs and whisk thoroughly until the yolks and whites are fully combined.

Step 17
Add approximately ½–¾ cup Nurri milk, the 1 teaspoon cinnamon, remaining ¼ teaspoon cardamom, and seeds from the second vanilla bean. Whisk vigorously until the mixture is smooth and the spices are evenly dispersed.

Step 18
Allow the custard to rest for approximately 2 minutes, then whisk again immediately before dipping the bread, as the spices may settle.
Step 19
Prepare the Cooking Surface. Preheat a large nonstick skillet or griddle over medium-low to medium heat for approximately 2–3 minutes. Lightly grease the cooking surface if necessary.
Step 20
Meanwhile, preheat the oven to 200°F and place an oven-safe wire rack over a baking sheet. This will hold finished French toast warm without trapping steam underneath and making the bread soggy.
Step 21
Keep the prepared cream refrigerated and the blueberry syrup covered until the final cooking stage.
Step 22
Cook the French Toast. Working in batches, dip each slice of Dave's Killer Bread into the prepared egg custard. Allow each side to absorb the custard briefly, approximately 3–5 seconds per side, depending on the thickness and freshness of the bread. Lift the bread and allow excess custard to drip back into the bowl. Immediately transfer to the preheated griddle.
Step 23
Cook approximately 2–4 minutes per side, adjusting the heat as needed, until the exterior develops an even golden-brown crust and the egg custard is fully cooked. Avoid pressing down on the bread with the spatula, as this compresses the interior and releases moisture.
Step 24
Transfer completed slices to the prepared wire rack in the warm oven while cooking the remaining slices.
Step 25
Timing: Begin gently reheating the blueberry syrup during the final batch of French toast. This ensures the syrup and toast are both hot when assembled.
Step 26
Assemble the Cream-Stuffed PowerToast
Step 27
Remove the French toast from the oven and arrange four slices on a clean work surface. Spread a generous, even layer of the chilled vanilla-cardamom cream over each slice, keeping the filling slightly away from the edges. Top each with a second slice of warm French toast, forming four stuffed sandwiches.
Step 28
Press gently to secure the layers without forcing the filling out. Using a sharp knife, cut each sandwich diagonally into halves or quarters.
Step 29
For a dramatic presentation, arrange the pieces slightly overlapping or stacked at an angle, exposing the cream filling between the golden slices.
Step 30
Finish the Vanilla-Bean Whipped Topping. Whisk a reserved portion of the thick vanilla yogurt until smooth and airy. If needed, incorporate a very small amount of cold Nurri milk to produce a softer, spoonable consistency. Keep refrigerated until the moment of plating.
Step 31
For a lighter appearance, whisk vigorously immediately before serving.
Step 32
Note: Yogurt and milk alone will create a creamy topping rather than traditional stiff whipped cream. A true whipped topping requires whipping cream or another suitable whipping ingredient.
Step 33
Final Plating and Presentation. Place each portion of stuffed French toast onto a warm serving plate. Spoon the hot blueberry syrup generously over the toast, allowing the syrup and softened blueberries to flow naturally between the slices and onto the plate. Add a generous dollop of cold vanilla-bean cream on top.
Step 34
Scatter the remaining fresh blueberries around and over the dish for brightness, freshness, and texture.
Step 35
Serve immediately while the French toast is hot, the blueberry syrup is warm, and the vanilla cream remains cool.
Step 36
Chef's timing note: The blueberry syrup and cream can be prepared ahead of time. Cook the French toast immediately before serving, then assemble and plate without delay. Hot toast, warm syrup, and cool cream are the defining contrasts of this dish.
