Ingredients

400gShengmian Noodles
100gpork mince
3 Tbssichuan yacai
green onions
garnish

Instructions
Peppercorns
Step 1
Toast and Grind the Sichuan peppercorns. Toasting the Sichuan peppercorns over low heat for about a minute will bring out the numbing flavor of the peppercorn. Once those are toasted, grind them up in a mortar - be sure you get them real fine.
Sauce + Marinade
Step 2
Heat up the soy sauce, sugar, vinegar, and MSG mixture. Don’t leave the mixture over heat for long – long enough to dissolve the sugar and the MSG into the sauce. Once done, assemble the sauce - 2 parts soy sauce/sugar mixture: 2 parts chili oil: 1 part sesame paste. Sprinkle in the ground Sichuan peppercorn powder, and mix thoroughly.
Step 3
Marinate the pork for 10-15 minutes with salt, sugar, cornstarch, soy sauce, shaoxing rice wine, and sesame oil.
Stirfry
Step 4
Heat a wok/pan until piping hot, turn off heat, add oil and swirl around to form a non-stick surface. Turn heat back on and add dried chillies and fry for 30 seconds to flavour the oil before removing them.
Step 5
Add in the Yacai and continue frying on low heat for about a minute, until they start to slightly wilt. Increase the heat to medium-high, and toss in the pork together with its marinade. Stir fry for about a minute, being sure to break up the pork mince.
Step 6
Once the pork has changed color, add in 1/2 tbs of shaoxing cooking wine. When adding, put it on the spatula and pour it around the sides of the wok. Then do the same thing with a half tbsp of soy sauce. Once the liquid’s mixed in and no longer visible the toppings are finished.
Step 7
Boil the noodles – approx. 3 mins for Shengmian. Taste them to make sure they’re cooked, then rinse under cool water to stop the cooking process.
Assembly
Step 8
Scoop 3 spoonfuls of the sauce and spread over the bottom of a bowl.
Step 9
Assemble the Dan Dan noodles. Place the noodles over the sauce, then nestle the meat filling on top. Scoop a couple spoons of chili oil around the noodles, and garnish with some green onion.
