Instructions
Step 1
Mix the yeast with half a cup of milk and sugar in a small bowl. Mix well and set aside for ten minutes.
Step 2
Put all the ingredients of the dough in a stand mixer with a kneading hook, except for the butter and the small bowl that we set aside.
Step 3
Put for about 3 minutes at slow speed. Add the yeast mixture that we kept aside.
Step 4
While kneading slowly, gradually add the cubes of butter so that they are completely absorbed. Continue kneading for about 5 minutes, until you get a slightly soft dough, but not too soft. If the dough is too soft, add a little flour.
Step 5
Transfer to a deep and wide bowl, cover with plastic wrap and leave to rise for about two hours.
Step 6
Transfer the dough to a floured surface and using the palms of your hands, in rolling motions towards the work surface, create circles the size of a ping-pong ball.
Step 7
Place on a baking sheet lined with lightly floured baking paper, at a distance of 15 centimeters from each other. Cover with more baking paper, and place in a warm place to rise for about an hour, until the balls triple their volume.
Step 8
In a deep and wide pot, bring the refined butter to a temperature of 180 degrees, and fry the donuts for about two minutes on each side. Transfer to absorbent paper.
Step 9
Quick strawberry jam - put all the ingredients in a wide, deep pan, and cook on a very high flame, while stirring, for about 7 minutes. Remove from heat and set aside to cool.
Step 10
To serve - transfer a cup of white sugar into a deep plate. Dip the donuts, while still warm, in sugar, and set aside.
Step 11
Place a donut on each plate, next to it a tablespoon of jam, and serve.
