Instructions
Step 1
Preheat olive oil in a large skillet over medium high heat. Add sweet potatoes and hand off chili powder and salt. Saute for 15-20 minutes until soften, stir occasionally.
Step 2
While sautéing, mix ingredients for sausage. Add to skillet after sweet potatoes have softened. Break up sausage with a spoon and cook for 3-4 minutes until browned.
Step 3
Add in bell peppers, onion, and remaining seasonings. Cook for another 5 minutes. Stir in lettuce and remove from heat. Divide into 4 meal prep containers and refrigerate.
