Garlic Naan Doughballs

Instructions

The Dough

Step 1
Mix the water yeast and sugar and let sit for 10 minutes
Step 2
Combine the flour, salt, nigella seeds and yogurt, pour in the yeast mixture and combine
Step 3
Knead for 10 minutes then cover and let prove for an hour
Step 4
Cut into 48 Doughballs (divide into quarters and each quarter into quarters and then into 3 to get even pieces) and form into plump Doughballs
Step 5
Set on a floured tray and cover with cling film and let rise til doubled in size

The Garlic Butter

Step 6
Crush the garlic and finely chop the coriander (or blend together)
Step 7
Melt the butter and add the garlic coriander oil salt and pepper and stir through

The Garlic Doughballs

Step 8
Heat up a cast iron skillet til smoking
Step 9
Lay as many Doughballs as will fit and either:

Cook in a 450C pizza oven for 90 seconds
Step 11
Pan Fry for 2 minutes before putting under the grill on max heat for 2-3 minutes
Step 12
Brush with the garlic butter and set aside ready for warming up later to eat and repeat with the rest of the Doughballs
