Instructions
Step 1
Preheat oven to 350. Spray muffin pan with cooking spray or line with muffin papers.
Step 2
Beat eggs, oil, syrup/honey, milk, vanilla, and almond extract in a large mixing bowl.

Combine oat flour, baking powder, and salt, then add to egg mixture. Stir until just blended.
Step 4
Fold blueberries and almonds until they are evenly incorporated. Let batter rest for 5-10 minutes.
Step 5
Spoon batter evenly into muffin pan.
Step 6
Bake 25-30 minutes or until the centers are cooked through.
Step 7
Remove from oven and cool before serving.
