1 Tbspolive oil
1yellow onion

1carrot
chopped
1red bell pepper
chopped
1jalapeno
seeded and minced
2 Tbspchili powder
2 tspground cumin
2 tsppaprika
½ tspsalt
2 Tbsptomato paste
15 ozcan tomato sauce
plain
1 cupbeer
3 cupsvegetable broth
3 cupsmacaroni
3 cupsbeans
cooked
¼ cupnutritional yeast
1 Tbsppure maple syrup
1 Tbsplime juice
Jalapenos
fresh, sliced thin
cilantro
chopped
red onion
chopped
avocado
chopped
Instructions
Step 1
In 5+ quart soup pot, heat oil over medium. Add onion, cook until just about golden 5+ minutes. Add carrot, bell pepper, and jalapeno, cook 2 more minutes. Add chili powder, cumin, paprika, salt, and tomato paste, cook 1 more minute.
Step 2
Add tomato sauce, beer, and broth, bring to a mild simmer. Add pasta, stir and cover, stirring occasionally until pasta is at desired doneness, 9-12 minutes. Remove from heat, add beans, yeast, syrup, and lime juice.
Step 3
Serve with desired toppings
