Bacon Relish - add to burgers / sausages / meat / etc

Sounds good? That’s because it is! This smoky flavoured stuff goes great with pretty much any barbecued meat, with cheese, on top of fried eggs, you name it! It’s the perfect topping for a good homemade cheeseburger. After all, bacon makes everything better! 😜
The amounts on this recipe make one jam jar of bacon relish.

Instructions
Step 1
Chop your bacon and cook until almost crisp, stirring it around often.
Step 2
Drain all but ½ TBS or so of the bacon grease out.
Step 3
Add in the onions and sauté for about 5 minutes.
Step 4
Next, add in the garlic and sauté for 1-2 minutes, stirring the whole time.
Step 5
Add in brown sugar, vinegars, bourbon and water. Stir and bring to a simmer over medium heat.
Step 6
Add in Thyme sprigs and pepper and continue simmering another few minutes, stirring often, being careful not to burn it. Add the maple syrup towards the end and stir.
Step 7
Taste and adjust seasoning to your preference if necessary.
Step 8
Remove Thyme sprigs and allow the mixture to cool, stir in the liquid smoke while cooling.
Step 9
You can then pulse the jam a few times in your food processor for a finer relish or leave it as is. Up to you.
Step 10
Once completely cool, store in pre-sterilised airtight jars in your refrigerator for up to 3 weeks.
Step 11
Heat it up a bit to enjoy on whatever you like. If you need to after reheating adding a Tbsp or so of water if the relish is too thick.
