Step 1
1. Cook bacon in medium-sized Dutch oven or stockpot over medium heat. Transfer the cooked bacon to a paper-towel lined plate, leaving as much of the grease in the pot as possible.
2. Add the onions, celery and garlic to the pot and season with salt and pepper. Cook until softened, about 4 minutes.
3. Add the broth to deglaze the pot, then add the cauliflower. Bring to a boil, then reduce the heat to a simmer and cook until the cauliflower is soft, about 15 minutes.
4. Stir in the sour cream and 1 cup of the cheese. Blend with an immersion blender or food processor until smooth. Depending on the size of your food processor, you may need to work in batches. Return the soup to the pot to keep war,. Add additional salt and pepper to taste.
5. Serve the soup topped with bacon and a sprinkle of remaining cheese.
