Instructions

Step 1
Combine the graham crackers, butter, and sugar for the crust. Press firmly into the bottom of a 9 inch springform pan. (Or get a 10" pre-made crust)
Step 2
Preheat oven to 300⁰F.
Step 3
Melt white chocolate and cover Graham cracker crust. Freeze.
Step 4
In a large bowl, beat cream cheese and sugar until smooth.
Step 5
Add cream, egg, and vanilla extract. Beat until just combined.
Step 6
Pour into crust and top with fruit.
Step 7
Place the cheesecake pan on a baking sheet and then wrap two wet dishtowels around it to help it bake more evenly.
Step 8
Bake for 1 hour and 10 minutes.
Step 9
Once done, turn the oven off and crack the oven door open a few inches and leave the cheesecake in there for 30 minutes.
Step 10
Refrigerate until ready to serve.
