Instructions
Step 1
First, you need to roast and peel the sweet potatoes: Preheat the oven to 425 degrees Fahrenheit. While it's preheating, wash and poke holes with a fork in your potatoes while they are raw.

Step 2
Warm the potatoes for 45 minutes in the oven. They will be fully cooked and tender inside but super simple to peel.
Step 3
Once done, you should be able to peel them by hand. If needed, you can make a small incision with a knife, first.
Step 4
Preheat oven 350F

Step 5
Slice the sweet potatoes into 1.5 inch thick rounds. They will be soft since they were already roasted to peel the skin.
Step 6

Stack and angle the slices in a casserole dish.

Step 7
In a small bowl, melt the butter and stir together the sugar, cinnamon, salt, and nutmeg.

Step 8
Using a spoon or a cooking brush, apply the mixture on tope of the angled potatoes evenly.

Step 9
Grate the orange zest over each column of the sweet potatoes.
Step 10
Cover with foil and bake for 30 minutes.

Step 11
Remove foil and bake for another 10 minutes to caramelize.

Step 12
Serve warm or room temperature.
