Bitter melon soup

Bitter Melon Soup. I did not like this soup when I was a kid but as I got older, I learned to appreciate it and enjoy it. It’s slightly bitter but the stuffing and the soup gives it so much flavor. It’s so good with a bowl of steamed rice. Truly a Vietnamese comfort dish.

Instructions

Step 1
Cut and core the bitter melon into 2 inch pieces. Soak the bean thread noodles and wood ear mushroom in warm water for 5 minutes, then drain and cut with scissors. In a bowl add ground pork, noodles, mushroom, fish sauce, chicken bouillon, black pepper and oyster sauce. Mix to combine.
Step 2
Stuff the mixture into the core of the bitter melon. Any leftover meat can be rolled up to form meat balls, this will give the soup more flavor. In a large pot, add water, meatballs, bitter melon, chicken bouillon, fish sauce and black pepper. Let this come to boil and simmer for about 20 minutes. Taste and adjust the seasoning to your preference. Add green onions.
