Ingredients
4 servings
1Onion
medium size, cut into cubes
1potato
medium, cut into cubes
1carrots
large, cut into circles
1Zucchini
medium size, cut into cubes
1 cupFrozen green pea
2tomatoes
peeled and chopped rough
3 cupsvegetable broth
¼ teaspoonsalt
2Cinnamon stick
½ teaspoonAllspice
¼ teaspoonblack pepper
2 Tbsptomato sauce
1 Bunch of mixed herbs, tied with a clean thread.
Instructions
Step 1
In a deep saucepan, put two tablespoons of vegetable oil, put the two cinnamon sticks, add the onion, and sauté for 2 - 3 minutes until onion wilted.
Step 2
Add the rest of the vegetables and stir about 5 minutes, then add 3 cups of vegetable broth, tomato sauce, parsley bunch, salt and spices, bring to a boil, reduce to medium low and cook for for 1 hour, stirring every now and then.
Step 3
Remove the parsley bunch and cinnamon sticks, taste and adjust the seasoning and serve it with rice.
