Step 1
Mix the mixed herbs in with the flour and season with salt & pepper – either use a bag which you can then add chicken pieces, shake to coat, or just coat in a bowl also works fine.




Step 2
Fry the coated chicken pieces in a little olive oil until they are golden but not cooked through. Place in an oven proof casserole dish with a lid.

Step 3
Then in the same pan, fry the onions until translucent, add to the casserole dish with the chicken.

Step 4
Then fry the mushrooms for a few minutes. Add the glass of wine in the pan with the mushrooms, it will lift any flavour, pour it all into the casserole dish.




Step 5
Pour in chicken stock until it just covers the chicken. Season again if need be.

Step 6
Place in the over at 180 degrees for about 45mins to 1 hour, when the chicken is falling off the bone or tender.
Step 7
Take out and add the thick cream, just until it gets the ideal consistency. Let it stand for a couple of minutes.

Serve with rice of your choosing.
