Ingredients

½ cupapple cider vinegar
1lemon
Juiced
0.5low sodium vegetable broth
organic
1 Tbspseasoning mix
any brand not containing sugar
1 bulbfresh garlic
Separated into cloves and peeled
2red onions
large, Halved midline and cut into 1/8 wedges
4bell peppers
Cut half top to bottom, stem, pith, and seeds removed, and cut into wide strips
2zucchini
Cut into rounds
Instructions
Step 1
Preheat oven to 475° F.
Step 2
Mix together vinegar, lemon juice, veggie broth, and seasoning. Reserve ¼ cup of liquid mixture for basting and set aside.
Step 3
Toss garlic and vegetables in marinade until they are coated.
Step 4
Spread evenly on a large roasting pan lined with aluminum foil, dull side up and lightly coated with avocado oil, or lined with parchment paper.
Step 5
Roast for 45 minutes, turning and basting with reserved liquid every 10 to 15 minutes.
