Instructions
Step 1
to make the cookies, beat butter and sugar together until pale and creamy, then beat in the yolk and vanilla
Step 2
mix the flour and baking soda together, then add to the butter and sugar
Step 3
mix together with a spatula or wooden spoon until combined, then stir in the chocolate chips
Step 4
spread a large piece of cling film on the countertop. tip the dough out onto the cling film and roll into a 5cm-thick sausage shape
Step 5
wrap tightly and refrigerate for 45 minutes to 1 hour, until set firm
Step 6
preheat the oven to 170oC. Line two baking trays with non-stick baking paper
Step 7
cut the log of dough into discs 1 cm thick and place on the lines baking tray
Step 8
bake in a preheated oven for 10 to 12 minutes, until golden
Step 9
transfer to a wire rack and allow to cool completely on the trays
Step 10
to make the filling, whip the cream until soft peaks form
Step 11
in a seperate bowl, mix together the mascarpone, hazelnut butter and icing sugar with an electric mixer, then fold in the whipped cream
Step 12
to assemble, take 2 tablespoons of the filling and place in on one cookie, flat side facing up, and spread it out but not all the way to the edges
Step 13
scatter over 1 teaspoon of crushed hazelnuts, then sandwich together with another cookie
