Pineapple Pecan Cake with Cream Cheese Frosting

I love this cake. It's so delicious. Even though it has a can of pineapples it doesn't have an over powering taste of pineapple. It's very subtle. It's one of my favorite desserts.

2 cupssugar
2 teaspoonsbaking soda
2eggs
20 ozcan crushed pineapple with juice
1 cupchopped pecans

Mix the dry ingredients

Add in the eggs, pineapple along with its juice, and the pecans

Stir just until moistened

Grease 13x9 cake pan with butter

Pour cake batter into pan

Bake in a preheated 350 degree oven for about 35 minutes or until toothpick comes out clean. Depending on oven you might need to adjust time. I usually do a toothpick test at 30min.

Cool cake completely before icing

Put cream cheese, butter, confectioners sugar, and vanilla extract into a big bowl

Beat until smooth with an electric mixer. Start on lower speed and increase speed once everything is combined to make icing fluffy.
