Step 1
Preheat an oven to 425°F degrees and line a large sheet pan with nonstick aluminum foil.

Step 2
Place the oil, seasoning, chicken, green beans, and bell pepper into a large bowl and season with pepper and toss until well combined.
Step 3
Spread the chicken and vegetable mixture evenly over the prepared sheet pan in a single layer. Arrange the pan so that the chicken thighs are on top of the vegetables. Sprinkle over the pepitas.
Step 4
Bake in the oven for 30 to 35 minutes or until cooked and golden brown. Remove from the oven. Transfer to plates, serve and enjoy.
