Instructions

Prepare Enhanced Sauce

Step 1
In a bowl, combine Greek yogurt, light mayonnaise, tomato paste, relish, mustard, vinegar, sweetener, paprika, garlic powder, and onion powder.
Step 2
Mix thoroughly, cover, and refrigerate for at least 20 minutes to allow flavors to develop.

Create Protein-Rich Beef Mixture

Step 3
In a large bowl, combine ground beef, black beans, beaten eggs and egg whites, Worcestershire sauce, garlic, paprika, onion powder, salt, and pepper.

Mix gently but thoroughly until well combined.

Divide mixture into 12 equal portions (approximately 100g each) and form into balls.

Assemble & Cook Tacos

Step 6
Heat 1 Tbsp olive oil in a large non-stick skillet over medium-high heat.

Place a tortilla on a clean work surface and add one portion of beef mixture on top.

Press the meat mixture firmly onto the tortilla, flattening it to cover the surface, leaving a small border around the edge.

Place the taco, meat-side down, in the heated skillet. Cook without moving for 3-4 minutes until a golden crust forms on the beef.
Step 10
Flip the taco, reduce heat to medium-low, and immediately place a slice of cheese on top of the beef.
Step 11
Cover the skillet and cook for another 2 minutes until cheese melts and tortilla becomes crisp.
Step 12
Remove to a warm plate and repeat with remaining tacos, adding more oil as needed.

Finish & Serve

Top each taco with shredded lettuce, red cabbage, diced tomato, red onion, and pickle slices.

Drizzle with protein-boosted sauce and sprinkle with toasted sesame seeds.

Serve immediately, two tacos per person.
