Cannellini Bean and Tuna Salad

A quick, no-cook salad, ready in minutes. Serve with a slice of crusty wholemeal bread and a green salad. Great for those days when it's too hot to cook.

Ingredients
4 servings

0.5red onion
small, peeled and very finely chopped
160gcan of tuna chunks in water
drained
1can cannellini beans in water
drained and rinsed

1pickled gherkin
finely chopped

1 tablespooncapers
drained and rinsed

2 tablespoonsred wine vinegar

parsley
small, finely chopped

black pepper freshly ground
to taste

Chives
small, snipped
Instructions
Step 1
Gently mix all of the ingredients together in a bowl. Check the seasoning and adjust the amount of black pepper and red wine vinegar to your taste. Garnish with snipped chives and serve.
