Instructions
Step 1
Preheat the oven to 350°F and line an 8"x8" tin with baking paper.
Step 2
Crush together the cookies and butter and press mixture into the base of the prepared tin.
Step 3
Mix together the almond milk and lemon juice (or vinegar) to make the buttermilk and let sit for a few minutes to thicken. Then beat together with the cream cheese, egg, icing sugar, vanilla extract.
Step 4
Pour mixture over the cookie base. Place in the oven for 15 minutes.
Step 5
Take it out and sprinkle the remaining crumbled cookies over the top and place back in the oven for another 20-25 minutes.
Step 6
*There should be a light wobble when removed.*
Step 7
Allow to cool to room temperature AND THEN place in the fridge for at least 4 hours but it is better the next day.
