Step 1
Season meat lightly with salt and pepper and brown on two sides, for approximately 3 minutes. Set meat aside.
Step 2
On medium heat, add oil, onions and garlic, thyme and bay leaf and brown for a few minutes. Add the flour and stir until it is thoroughly moistened. Then add carrots, celery, potatoes and red wine, bring to a boil and reduce for 5 minutes, stirring frequently. Add the beef stock and simmer. Add back the beef and bring to a simmer until beef in tender, 45 min – 1 hour.
