Potato & Swiss Chard Stew

Instructions

Step 1
Mix well the minced beef ingredients and chill them in the fridge for 15 minutes.
Step 2
Remove the the minced beef from fridge, torn it into small chunks or small balls, then start searing it with 1 or 2 tablespoons of olive oil, in a large pot, over medium-high heat for 5 minutes, stirring occasionally, until the meat is browned on all sides.
Step 3
Add the onion to the pot and continue to cook for another 4-5 minutes, stir in the garlic, oregano and cook for 30 seconds.
Step 4
Add the broth and potatoes to the pot, increase the heat to high and bring to a boil, season with salt & pepper, reduce heat to medium and cook for 15 minutes.
Step 5
Stir in the Swiss chard, and (optional kidney beans), cook for 15 minutes, add the lemon juice, lower the heat and let it simmer for another 5 minutes or so, the potatoes will release some starch so the broth thickens up more the longer it cooks.
Step 6
Season with salt & pepper if needed, garnish with chopped oregano or thyme and serve hot with rice on the side.
